Mary's Recipes
Mary's Jalapeño Pimiento Cheese
This is Mary's actual recipe for the restaurant, so it makes enough to feed a small army.
Depending on the size of your family, adjust the proportions accordingly.
Ingredients:
• 5 pounds shredded sharp yellow cheddar cheese
• 2 pounds shredded Monterrey Jack cheese
• 2-3 cups of Duke's Mayo (or enough to make it "nice and wet" says Mary)
• 3 large jars of chopped pimientos
• 10-12 fresh chopped, seeded jalapeños
• Salt, pepper and ground Cayenne pepper to taste
Directions:
Put all ingredients in a big bowl and mix together with gloved hands.
Taste, adjust seasonings and serve!
